The Bannockburn Pinot Noir is Carrick's flagship wine and known for its structure and ability to age well over a long period of time. It has a lovely aroma with notes of fresh blackberries, raspberry coulis and vanilla. It's complex and layered on the palate, the tannins are soft and build, alongside notes of wood smoke, leather and black pepper. It's long and powerful, with plenty of years ahead of it to gather further detail.
The Casillero del Diablo Merlot is bright dark and deep purple. Subtle aromas of chocolate, dark plums, red berries and spices, with hints of vanilla and smoke. Medium-bodied, with lovely tannins, velvety texture, rich and a long, pretty finish.
The Bollinger style: depth and subtlety. The emblematic cuvée of Bollinger's expertise. The delicate assembly of the expression of a harvest and a majority of reserve wines, some of them held in magnums for between 7 and 15 years Special Cuvée is composed of over 85% Grand and Premier crus of the three main Champagne varieties: 60% Pinot Noir, 25% Chardonnay and 15% Meunier. It is cellar aged for twice as long as required by appellation regulations. It is moderately dosed at between 7 and 8 grams per litre.
The nose, very open and expressive, delivers aromas of fruit and brioche. It also gives off the fragrance of peach, white flowers (hawthorn, acacia) and vanilla pod. The entry onto the palate is lively, fresh and in total harmony. This is a delicate wine with flavours of fresh fruit and honey.
The Devil Tawny is predominately a blend of Shiraz and Grenache with a small amount of sweet Muscat blended in for perfume and complexity. The average age of the resultant blend is 20 years old. The Devil is deliciously rich and ethereal. The nose is brimming with roasted almonds and marzipan characters. The palate has the typical rancio characters evident from prolonged oak maturation and is supported by luscious flavours of boiled fruit cake and aged spices.
The Parson is a lively berry-scented drop with a hint of black pepper on the nose. Shiraz fruit floods the mouth with good depth and persistence, finishing dry and firm.
